From zesty cilantro to creamy avocado and juicy mango, there’s no shortage of flavor. Let’s turn up the fun and keep things light with a few tasty tips!

Spicy Chicken Tacos with Creamy Avocado dressing
Total prep: 30 minutes
Makes: about 10 tacos
Ingredients:
- 1 medium onion, sliced thin
- 2 jalapeños, seeded and sliced (keep seeds for me heat)
- 2 teaspoon olive oil
- Kosher Salt
- 2 pounds Greenway Skinless, boneless chicken breast
- 1 teaspoon kosher salt
- 1 teaspoon garlic powder
- ½ teaspoon cumin
- 1 teaspoon chili powder
- ½ teaspoon onion powder
- Olive oil
- ½ lime, juiced
- 2 cups arugula
- 8 to 10 Mission 10” Tortillas
Avocado dressing:
- ½ avocado
- ¼ cup mayonnaise
- ½ lime, juiced
- ¼ cup minced cilantro
- Pinch of salt
Directions:
1. Heat oil in a skillet over low heat. Add onions, jalapenos and sprinkle of salt. Cook until onion is soft and golden brown, about 20 minutes. Set aside.
2. In a medium bowl, combine avocado, mayonnaise, lime juice, cilantro and mix well. Cover and refrigerate.
3. Meanwhile, in a small bowl combine, salt, garlic powder, cumin, chili powder, onion powder season both sides of chicken and drizzle with olive oil.
4. Heat a grill pan over medium-high heat, drizzle with olive oil and cook chicken about 4 to 5 minutes per side or until internal temperature reaches 165 degrees F. Set aside and keep warm.
4. Warm tortillas and assemble tacos: Lay one tortilla on flat surface top with arugula, followed by sliced chicken, avocado dressing and onions & jalapeños, drizzle with siracha for more heat!
