Celebrate Summer Salads

Summer is a great time to enjoy the bounty of produce it brings. Fresh fruits and vegetables provide a nutritious and sweet boost of satisfying energy. Turn your summer salad into a hearty meal with these tips:

  • Start with Green Way Organic Salads as your base and add in sweetness such as grilled peaches, cut up watermelon or berries.

Grilled Peach Summer Shrimp Salad

Prep: 20 minutes

Makes: 4 Servings

Ingredients:

  • Green Way Organic Salads
  • 1-pound Green Way Cooked Shrimp (defrosted if frozen)
  • Salt & pepper
  • 2 peaches, halved, pit removed
  • 2 teaspoons olive oil
  • 1 Seedless cucumber, chopped
  • 1 Red bell pepper, chopped
  • ¼ red onion, finely chopped
  • 1 cup blueberries
  • Store prepared dressing such as balsamic vinaigrette

Directions:

  1. Heat a grill pan or outdoor grill over medium-high heat.
  2. For the peaches: Cut in half and twist (like an avocado)! Remove pit and cut peaches into thirds. Toss with olive oil and grill for 2 to 3 minutes per side.
  3. Meanwhile, in a large bowl add in salad greens, chopped cucumber, bell pepper, red onion and blueberries.
  4. Remove shells from shrimp and ensure they are completely thawed before using.
  5. Remove peaches from grill and allow to cool before adding to salad.
  6. Toss salad with your favorite dressing and enjoy!
