What is Shmurah Matzo? The biblical name for Passover is Chag Hamatzot - The Festival of Matzo - because of the central role Matzo plays during the seder on the first two nights of the holiday, as well as the subsequent days. Shmurah (literally guarded) Matzo is made from wheat that has been stringently guarded against any contact with water from the moment of harvest until the baking. Contact with water could cause leavening, thus disqualifying its use on Passover. In ordinary matzo the wheat is guarded only between the time of milling and the baking. Shmurah matzos are round and are baked entirely by hand, as they have been for the past 3,000 years.
